Serves 10-12
Ingredients:
2 packages of twelve-ounce boxes shelf-stable tofu, firm or extra-firm
2 T honey or maple syrup
1 tsp. vanilla
1 bag of twelve-ounce non-dairy semi-sweet chocolate or chocolate chips
1 graham cracker or chocolate wafer crust (store bought or homemade)
Steps:
- Blend the tofu in a blender or food processor until it is very smooth, scraping down periodically.
- Blend in honey or maple syrup, and vanilla.
- Melt the chocolate in a large ceramic or glass bowl, on low power in the microwave, just until soft, then stir until smooth.
- Pour the tofu mixture into the melted chocolate and mix thoroughly with a rubber spatula.
- Be sure to get all the chocolate off the bottom of the bowl as you mix together.
- Pour the mixture into the chosen pie crust.
- Chill until firm.
- Garnish with non-dairy topping, fresh berries of choice, or sugared berry compote, and serve!
