Lenten Recipe: Chocolate Infinity Pie

Serves 10-12

Ingredients:
2 packages of twelve-ounce boxes shelf-stable tofu, firm or extra-firm
2 T honey or maple syrup
1 tsp. vanilla
1 bag of twelve-ounce non-dairy semi-sweet chocolate or chocolate chips
1 graham cracker or chocolate wafer crust (store bought or homemade)

Steps:

  1. Blend the tofu in a blender or food processor until it is very smooth, scraping down periodically.
  2. Blend in honey or maple syrup, and vanilla.
  3. Melt the chocolate in a large ceramic or glass bowl, on low power in the microwave, just until soft, then stir until smooth.
  4. Pour the tofu mixture into the melted chocolate and mix thoroughly with a rubber spatula.
  5. Be sure to get all the chocolate off the bottom of the bowl as you mix together.
  6. Pour the mixture into the chosen pie crust.
  7. Chill until firm.
  8. Garnish with non-dairy topping, fresh berries of choice, or sugared berry compote, and serve!
