Serves 4
1 can coconut milk (full fat, unsweetened)
1/2 cup non-dairy chocolate chips
1 T maple syrup or honey
1/2 tsp. of vanilla extract
Pinch of kosher or sea salt
- Drain the liquid from the coconut milk then place the thick cream in a mixing bowl.
- Melt the chocolate chips in a pan, stirring occasionally.
- Add the melted chocolate, syrup or honey, vanilla extract, and salt to the mixing bowl with the coconut cream.
- Use a mixer and beat the mixture until it is airy, light and fluffy.
- Chill in the refrigerator and top with fresh fruit or berries, chopped nuts, or non-dairy cream before serving (you can be as creative as you wish with your topping).
