Lenten Recipe: Serbian-Style Butternut Squash Potage

Serves 6-8

~ 2 pounds (1 kg) butternut squash
ΒΌ celery root (celeriac)
2 carrots
1 parsley root
2 potatoes
1 tsp Balkan spice such as Vegeta or Zacin C (optional)*
Pinch of salt
Pinch of pepper

Chop all ingredients. Pour them in pot with about 2 liters of water. Cook over high heat until it starts boiling, then reduce to medium heat and simmer for 30 min. When all ingredients are done cooking, blend the potage and serve. It can be garnished with croutons or chopped parsley leaves.

* These are blends of equal parts dehydrated vegetables (dried onion, parsley, pepper, and carrots) and salt, plus sugar equal to 10% of that mixture. You can also simply season the soup to taste with what you have on hand.
