Serves 4
2 large beets
2 Tbl tahini
3 garlic cloves, crushed
3 Tbl lemon juice
1/4 cup of water (adjust as needed)
Salt and pepper to taste
2 Tbl olive oil
Parsley or mint leaves for garnish
Clean beets, and boil or roast until soft. Leave to cool, then blend until coarse. Drain the liquid, but do not make it completely dry. In a separate bowl, add tahini to lemon juice and stir until creamy, adding water as needed. Add the crushed garlic, salt, and pepper, then add the beets. Stir well with a spoon. Then decorate the plate with olive oil and parsley or mint.
