Lenten Recipe: Middle Eastern Potato Salad

Serves 5 (side dish)

Ingredients:

5 large potatoes
3 green onions
1/3 cup olive oil
1/3 cup lemon juice
Β½ tsp. sumac (optional)
1 bunch parsley
ΒΌ cup mint (minced)
salt, pepper to taste

  1. Put potatoes in large pot and boil until soft. Should be able to stick a fork through easily.
  2. Refrigerate potatoes until cool. Then peel and chop into cubes. Set aside in a mixing bowl.
  3. Wash and rinse parsley and mint, then let drain well in colander. Finely chop both. Add to mixing bowl.
  4. Dice green onions. Add to mixing bowl.
  5. Mix everything together until well-blended.
  6. Add olive oil, lemon juice, sumac, and salt & pepper to taste.
  7. Gently fold with spoon until all ingredients well-blended. Taste and add additional seasonings as desired.
