Serves 5 (side dish)
Ingredients:
5 large potatoes
3 green onions
1/3 cup olive oil
1/3 cup lemon juice
Β½ tsp. sumac (optional)
1 bunch parsley
ΒΌ cup mint (minced)
salt, pepper to taste
- Put potatoes in large pot and boil until soft. Should be able to stick a fork through easily.
- Refrigerate potatoes until cool. Then peel and chop into cubes. Set aside in a mixing bowl.
- Wash and rinse parsley and mint, then let drain well in colander. Finely chop both. Add to mixing bowl.
- Dice green onions. Add to mixing bowl.
- Mix everything together until well-blended.
- Add olive oil, lemon juice, sumac, and salt & pepper to taste.
- Gently fold with spoon until all ingredients well-blended. Taste and add additional seasonings as desired.
