Lenten Recipe: Misir Wat (Ethiopian Red Lentils)

Serves 4

1 1/2 cups of split red lentils (misir)
2 1/2 T of freshly minced garlic
1 T fresh grated ginger
2 large red onions, finely chopped
4 T Berbere spice (available in some grocery stores or online)
2 T tomato paste
4 cups of water or vegetable broth
Salt to taste

  1. Cook the finely chopped red onions in a large pot for 10-15 minutes over a low-to-medium heat. Add the garlic and ginger, and cook for another 2 minutes.
  2. Add the berbere and tomato paste. Stir constantly for a minute or so.
  3. Add the rinsed split red lentils and stir well.
  4. Add the water or vegetable broth and bring to the boil. Reduce the heat. Simmer for 30 minutes, stirring every few minutes. Do not allow the mixture to stick and burn.
  5. Add salt to taste and let it rest before serving
  6. Serve with injera bread (or any bread if none is available)
