Serves 4-6
14 C water
2 lb red split lentils (such as from Trader Joe’s)
2-3 large poblano peppers
4-5 tomatoes
8-10 garlic cloves
1 habanero pepper (optional)
Salt to taste
Rinse lentils until the water turns clear. Combine lentils and water in a large pot and heat on high. Finely chop peppers, tomatoes, and garlic using a food processor, and add to the pot. Heat mixture until lentils become soft and begin to boil (usually 15-20 minutes on a gas stovetop). Allow to simmer on low for 10 minutes. Add salt as desired. (Freezes well for easy meals throughout Lent!)
