Lenten Recipe: Greek-Style Shrimp Scampi

(4 servings)

2 tsp olive oil
4 garlic cloves, minced or pressed
1 ¼ lbs canned whole tomatoes, drained and chopped
⅓ cup fresh parsley, chopped and divided
1 lb large shrimp, peeled and deveined (not cooked)
3 oz Feta cheese, crumbled (use vegan alternative for nondairy option)
1 Tbsp. fresh lemon juice
⅛ tsp pepper

Preheat oven to 400°F. Heat oil in heavy nonstick skillet over medium heat. Sauté garlic for 30 seconds. Stir in tomatoes and half the parsley. Let stand for a few minutes. Stir in shrimp and cook 3 minutes. Transfer to a greased casserole dish, and sprinkle with the cheese. Bake for 8–10 minutes, until shrimp is cooked. Sprinkle with lemon juice, the rest of the parsley, and pepper to taste. Serve with rice.
